Long-time comps, traditional and wild brewing yeasts have had a 4-month feast in our oak barrels. These six strains of Brettanomyces and two strains of Saccharomyces offer us Shed with funky and fruity aromas. Its slightly bitter finish makes it a particularly thirst-quenching beer. Shed is our first beer fermented from wild yeasts. It is one of the few on the market that is fully fermented in oak barrels. A complex blend of seasonal yeast and Brettanomyces produces these unique fruity aromas. Although the typical profile of "wild" yeasts is present, we also detect several other facets that make the Shed exceptional. It is important to refrigerate the bottle at least 24 hours before opening.
